  16. Take 1 tbsp jaggery
  17. Prepare 1 tbsp oil
  18. Take 1 tsp mustard seeds
  19. Get 1/2 tsp cumin seeds
  20. Take 1/4 tsp turmeric powder
  21. Make ready 1 pinch hing
  22. Take 3-4 curry leaves
  23. Take 1 dried red chilli
  24. Get to taste Salt
  25. Get 1 tbsp coriander leaves

It has been used to treat diabetes in ancient days; even today it is available in the form of tea, juice and extracts. Bitter gourd sweet curry translates to "hagalakayi sihi gojju" in kannada language. This type of hagalakayi gojju is one of the simplest curry prepared using bittergourd and it is very tasty. Hagalakayi gojju is prepared using bitter gourd, jaggery, coconut and rasam powder.

Steps to make Hagalkai gojju / Bitter gourd curry:
  1. Cut the bitter guard into roundles and put in a bowl, add salt and turmeric powder, mix well and keep aside for 30 mins. This helps to reduce the bitterness of the vegetable.
  2. Meanwhile prepare masala but dry roasting all the ingredients under masala one by one till nice and brown and the aroma comes. Cool completely and grind to a powder.
  3. After 30 mins squeeze the bitter guard from extra water that has released. Wash it on clean water and keep aside.
  4. In a pan heat oil add mustard seeds, cumin seeds, turmeric powder hing curry leaves and red chilli and let them splutter.
  5. Now squeeze the extra water and add the bitter guard to the pan. Saute for 3-4 mins.
  6. Add tamrind pulp, jagger, salt and prepared masala and cook till oil separates. Garnish with coriander leaves.
  7. Enjoy with rice or roti it tasyes awesome with both.
