The ingredients needed to make Stuffed Bitter Gourd Karela:
- Take 10 Small size karela(bitter gourd)
- Prepare 2 Tbsp coriander seeds
- Prepare 1 Tsp cumin seeds
- Prepare 1 Tsp fennel seeds
- Get 1/4 Tsp fenugreek seeds
- Take 1/4 Tsp Turmeric powder
- Take 2 Tbsp dry mango powder
- Get 1 Tsp chilli powder
- Get to taste Salt
- Prepare 5 Tbsp oil
- Get Pinch asafoetida
- Get 2 Finely chopped onion
- Prepare 1 Tsp ginger garlic paste
- Prepare as needed Thread
Karela (Bitter Gourd) is a vegtable often not loved by many. At our place here, Ronak absolutely hates it and I on the other hand absolutely love it! ' Bharwa karela' or 'Tangy and spicy stuffed bitter gourd' is a side dish that is prepared by shallow frying of bitter gourd or karela which is then stuffed with onion and spices to give it a spicy and tangy flavor. Stuffed karela It tastes delicious and even kids can enjoy it. Take the washed karela/bitter guard and make a cut through the karela length wise as show in below picture.
Steps to make Stuffed Bitter Gourd Karela:
- Take bitter gourd, trim ends, scrape skin, slit from the middle and remove all the seeds (please keep all seeds and skin in another bowl for stuffing). - Now put 1 tbsp salt on the bitter gourd and rub the skin, also rub inside and marinate well. leave for 30 minutes. Also put the 1 tsp salt on the seeds and skin which we kept in another bowl and leave them.
- Now take coriander seed, cumin seeds, fennel seeds, fenugreek seeds and roast them on low flame, Turn aromatic. Now transfer in to the Blender, add Turmeric powder, dry mango powder, chilli powder and make a fine powder.
- Now take oil in a saucepan, add asafoetida. Now put the chopped onion, ginger garlic paste and sauté well until the colour change. Now add seeds and skin and cooked well. Now add salt and finely masala powder which I have made before. Sauté well. Turns aromatic. Add 2Tbsp water for moist stuffing. Stuffing is ready now.
- Now clean the bitter gourd with the water and squeeze juice. Now fill the stuffing in the bitter gourd and tie tight with the thread. Now take 2 tbsp oil in a saucepan. Add pinch of asafoetida, turns aromatic, put the stuffed karela and roast them for on low medium flame until they get soft and cook. Stir occasionally. Do not burn. Now stuffing bitter gourd is ready to serve.
Stuffed karela It tastes delicious and even kids can enjoy it. Take the washed karela/bitter guard and make a cut through the karela length wise as show in below picture. In a pan add the oil and place the cut bitter guard pieces in the oil as show in below picture. Let it fry for few minutes. Stuffed bitter gourd has become my latest favourite recipe.
