  1. Take 250 gms bitter gourd
  2. Take 2 tsp roasted peanut powder
  3. Prepare 1/2 tsp or to taste Jaggery
  4. Get to taste red chilli powder
  5. Get to taste salt
  6. Get to taste tamarind pulp
  7. Prepare to taste garam masala
  8. Get to taste asafoetida
  9. Prepare to taste turmeric powder
  10. Get as needed oil

For making the karela masala recipe, you will first have to fry the bitter gourd slices. It is used to cook the masala. Heat oil in a thick bottomed kadai. When hot, add onions and curry leaves.

Instructions to make Spicy masala karela(bitter gourd):
  1. Make pieces of bitter gourd, apply salt on it, keep aside for ten minutes, now add hot water to marinated bitter gourd
  2. Remove water, heat Pan add oil to it add cumin seeds turmeric powder, asafoetida, now add pieces of bitter gourd
  3. Now add red chilli powder, garam masala, salt, tamarind pulp and Jaggery to it. Cook for couple of minutes then add roasted peanut powder. Mix well. You can skip the Jaggery, but a little amount of it enhances the taste.
  4. Ready to serve, goes well with chapati,bhakri

Heat oil in a thick bottomed kadai. When hot, add onions and curry leaves. Add the slit green chilly and bitter gourd cubes. Keep on frying till the bitter gourd turn into almost brown color. Now add the ground paste, mix well.
