The ingredients needed to make Stuff bitter gourd:
  1. Make ready 6-7 bitter gourd
  2. Get 1 tbsp salt
  3. Take 2 cup water

  7. Get 1/2 tsp red chilli powder
  8. Take 1 tsp coriander powder

Now tie each bitter gourd with the threads. In a non-stick pan add the peanut oil , once hot, reduce the flame and place the bitter gourds, shallow fry covered with a lid / cover on each side till crisp and golden brown in colour. Stuff the bitter gourd well with the prepared masala. Take an idly pan or a steamer and steam the bitter gourds for a few minutes or until half cooked.

Instructions to make Stuff bitter gourd:
  1. Firstly, in scrape the skin of bitter gourd and slit in the centre.
  2. With the help of back of the spoon, scrape off the seeds.
  3. Place the bitter gourd into a large bowl.
  4. Sprinkle in 1 tbsp of salt and rub well
  5. Rest for 30 minutes or until the bitterness is reduced.
  6. Further, add 1 onion and saute well
  7. Also, add 1 tsp ginger garlic paste and saute well.
  8. Add in scraped skin and seeds and saute well until it is cooked completely.
  9. Now add dry masala powder and 1 tsp salt.
  10. Saute until the spices turn aromatic
  11. Add in 2 tbsp water and mix until the stuffing turns moist.
  12. After the bitter gourd has marinated for 30 minutes, pour water and squeeze.
  13. Clean off the bitter gourd completely, and stuff the prepared stuffing into it.
  14. Tie the karela with a piece of thread or use floss to prevent stuffing from coming out while frying.
  15. Heat 2 tbsp oil,add in stuffed bitter gourd and roast for 5 minutes.
  16. Stir occasionally, and cover and cook for 10 more minutes.cook until the bitter gourd is cooked completely.
  17. Finally, enjoy stuff bitter gourd with hot steamed paratha or roti.
