The ingredients needed to make Bitter Gourd with Potatoes:
  1. Prepare 1/2 kg bitter gourd cut into pieces
  2. Take 2 big potatoes peeled and cut into slices
  3. Take As needed oil
  4. Make ready 2 tsp cream
  5. Get to taste salt and red chilli powder
  6. Get 1/2 tsp Turmeric powder
  7. Prepare 2 tsp dry mango powder
  8. Take 3 onion sliced

In a iron pan/kadai, heat coconut oil and crackle mustard seeds and urad dal. When it pops up, add bitter gourd and potatoes. These two are cut lengthwise as you can see in the below pic. You can chop it to smaller pieces per your wish.

Instructions to make Bitter Gourd with Potatoes:
  1. In a kadhai heat oil for frying.
  2. Deep fry bitter gourd and keep aside.
  3. Now fry potatoes till golden colour.
  4. In a kadhai add oil and onion. Cook it for five minutes. Then add bitter gourd and potatoes. Mix well.
  5. Now add all spices and cream, mix well.
  6. Cook it for ten minutes at medium. Then add dry mango powder and mix it.
  7. Cook for two minutes and turn off the flame.
  8. Sabzi is ready to serve.
  9. Serve hot with chapati.

These two are cut lengthwise as you can see in the below pic. You can chop it to smaller pieces per your wish. Bitter Gourd and Potatoes with a Twist Bitter Gourd (Pavakka) is my favourite vegetable. Simple pavakka mizhukkuvaratti (Bitter Gourd stir fry) is heavenly. I also like making Pitla with it. (Will post recipe for Pitla some other time).
