  5. Take to taste salt
  6. Get 1/2 tsp red chilli powder
  7. Prepare 1/2 tsp garam masala
  8. Get 1/2 tsp turmeric powder
  9. Make ready 1/2 tsp dried mango powder

Heat oil in pan, add onion, saute till onion turns golden brown. Then add red chili powder + ginger garlic paste / Kolhapuri masala. Add the bitter gourd slices and fry till crisp. Add another tbsp oil to the same wok.

  1. Wash the bitter gourd properly.Then cut them in round shape and sprinkle a little bit of salt all over them. Let it sit for a couple of hours. Wash the salted karelas so that there won't be excess salt and set aside. Make all the water is drained. In a kadhai, add oil and shallow fry them.
  2. Take them out of the kadhai and put it in a plate. In the same kadhai, add the onion and potatoes and sautee them for a few minutes.
  3. . Add salt, turmeric, red chilli, garam masala. Stir for a couple of minutes then add the fried karelas. Mix it well.
  4. Cover it and let the potatoes cook all the way. Add mango powder.Serve hot with parathas.

Add the bitter gourd slices and fry till crisp. Add another tbsp oil to the same wok. Adjust the salt and add a little more sugar or jaggery as required. Add chopped onion and saute till translucent, now add chopped green chilies, crushed garlic and finally chopped bitter gourd.
