  1. Get 1/2 kg karela
  2. Get 1/2 kg onion fine slice
  3. Make ready 1 large raw mango.(keri). Small pcs
  4. Take 1/4 cup oil
  5. Make ready 2 tbsp wheat flour, mix with 1tsp salt. (for cleaning the karela
  6. Make ready 1 tsp red chilli powder
  7. Prepare 1/4 tsp termuric powder. (haldi)
  8. Make ready 1 tsp pulao zeera(if not available, use Kala zeera)
  9. Take to taste Salt
  10. Prepare 1-1/2 tsp coriander powder(dhania powder)

How to Prepare for Khatti meethi karele ki sabzi- It is important to remove bitterness from karela/bitter gourd before using it. Make sure to peel, cut and deseed them, if the seeds are too hard. Make jaggery-coconut-poppy seeds mix and let it cool. Karela sabji is nothing but the bitter gourd slices fried and added to an onion tomato masala.

Steps to make Karele ki sabzi(Bitter gourd):
  1. Peel and wash karela.
  2. Squeeze each piece, to drain bitter water. Apply flour and salt. coat all sides and put karele in the sun light for half an hour, afterwards wash again
  3. In the pan, fry karele in little oil, at low to medium flame, till golden colour appears.
  4. Slit them, take out all the seeds.
  5. In another pan, put oil, add onion and keri, fry at medium flame. Add all dry ingredients after 5 minutes. Cook for about 10 minutes,till done.
  6. Set a side and cool it at room temperature.fill 1/2or3/4th filling in Karelas,tie with thread or tooth pick..
  7. Now set all karellas and remaining filling in pan also.
  8. Sprinkle 2-3 Tbsp water over it, put on 'dum' for 10 minutes, and serve.

Make jaggery-coconut-poppy seeds mix and let it cool. Karela sabji is nothing but the bitter gourd slices fried and added to an onion tomato masala.
