The ingredients needed to make Bitter Gourd pickle:
  1. Prepare 4 medium size Bitter Gourd
  2. Make ready 1 tbsp salt
  3. Prepare 2 tsp fennel seeds
  4. Prepare 1 tsp fenugreek seeds
  5. Make ready 1 tsp cumin seed
  6. Take 1 tsp carom seed
  7. Take 1-2 tsp Kashmiri red chilli powder
  8. Get to taste Salt
  9. Make ready 1/2 tsp black salt
  10. Get 1/4 tsp turmeric powder
  11. Take 1/4 tsp hing (asafetida)
  12. Take 1/2 cup mustard oil
  13. Get 1 small size raw mango

Ampalaya atchara also known as pickled bitter melon or gourd is a condiment that is paired with seafood or meat. This condiment is delicious by itself, I eat it like an appetizer. When my mom was catering, she made delicious green papaya atchara. In fact, a good friend suggested that she export her atchara.

Instructions to make Bitter Gourd pickle:
  1. First wash karela(bitter gourd) and wipe it properly.
  2. Cut karela into thin slices. Put it in the bowl and add 1Tbsp salt to it and let it rest for 30 minutes.
  3. Meanwhile we can prepare the masala. In a pan take 2 tsp of fennel seeds, 1 tsp cumin seeds, 1 tsp fenugreek seeds, 1 tsp ajwain.
  4. Roast all these masala on medium heat till it become aromatic.
  5. Grind the roasted masala into coarse powder.
  6. Now wash the karela properly under running water
  7. And spread these karela slices on to some cotton cloth to dry.
  8. It takes at least 3-4 hours to dry them. These slices should be very dry. There should not be any water left in the slices.
  9. Take a pan put mustard oil in it and bring it to smoky hot.
  10. Switch off the heat. Cool down the oil a little bit. Add turmeric powder to it. Then add asafetida. Mix it well.
  11. Then add karela slices to it. Mix it well.
  12. Add sliced or grated raw mango to it.
  13. Add kashmiri red chilli powder and salt to taste.
  14. Mix all the ingredients together very well.
  15. Now fill the karela achar in a glass bottle.
  16. You can eat this achar straight away.
  17. But you will get the proper flavor and taste of the achar by keeping this achar in sun for 2-3 days.
  18. Make it and enjoy it.
