  1. Make ready 4 Long bitter gourd
  2. Take 1 cup chopped onions
  3. Get 1/2 cup tomato puree
  4. Prepare 1/2 tsp chilli powder
  5. Take 1/2 tsp garam masala
  6. Take 1/2 tsp turmeric powder
  7. Make ready 1/4 cup chanaatta(gram flour)
  8. Make ready As needed Jaggery
  9. Take 2 tsp oil
  10. Take To taste Salt
  11. Prepare 1 tsp Coriander leaves chopped
  12. Take 3 cup Water

It has lot of health benefits and good for diabetics and helps in weight loss. We love to eat as side dish with sambar. One day, some bitter gourd dish was served. When I heard everyone at the table saying how good the bitter gourd dish was and it lacked it's natural bitterness, I was intrigued.

Steps to make Bitter gourd Masala:
  1. Cut bitter gourd 2 inch size, peel a bit of skin if it's too hard. Deseed and rise for 2times.
  2. Now boil it with 2 cups of water and salt. Wait until bitter gourd softens. Strain water and allow it to cool.
  3. Take a pan and roast chanaatta until brown on medium flame.
  4. Add all the masala to roasted chanaatta after removing from flame.
  5. Mix the masala tight by adding tomato puree.
  6. Now stuff the masala to bittergourd.
  7. In a pan add oil, add onions until golden brown and add stuffed bitter gourd. If masala is remaining after stuffing add the masala along with bitter gourd.
  8. Sprinkle some water, approximately 2 tbsp water and cover it. Once done, serve it warm.
  9. Note: Do not boil bitter gourd more than 5 mins on high flame.

One day, some bitter gourd dish was served. When I heard everyone at the table saying how good the bitter gourd dish was and it lacked it's natural bitterness, I was intrigued. I took a spoonful of the dish just to taste. I liked the dish so much that I had a generous helping of it. Take water, salt, turmeric powder and tamarind pulp in a sauce pan and bring it to boil.
