Steps to make Gluten free rock cakes:
  1. Cream together butter and sugar in mixing bowl.
  2. Add flour, mixed spice, baking powder and rub in with fingertips until it resembles breadcrumbs.
  3. Stir in fruit.
  4. Add egg and a splash of milk. Begin to stir with a knife and gradually add remaining milk whilst stirring to form a soft dough.
  5. Dollop spoonfuls of dough and lay onto lined baking tray, leaving room to spread.
  6. Cook in preheated oven at 190C for around 20 minutes or until golden brown.

This recipe is adapted to make it gluten and dairy free from my Grandma's original recipe. I used to make them for my Grandma when I was child and baking these now always makes me think of her.
