  6. If making Christmas cake you may want to double the quantities and bake for 2½ hours in an 8" square or round tin. When cold, wrap in foil and feed with brandy every week for 4 weeks before covering with marzipan and royal icing

You can ice this cake any way you want, it's not too sweet, so a fruit filling would be welcome. I used a simple cream cheese buttercream that I think is just the best thing ever. Take out as soon as baked. One-half hour before cake is done, brush top with corn syrup. Decorate with pecan halves and finish baking.
