  2. A lot of my recipes have the flour mix ingredient break down listed in them but in my more recent recipes I just refer to 'gluten-free flour'. I use either of my 4 numbered mixes attached above, depending on the recipe. Those are titled for specific bakes ie cakes, breads etc
  3. I favour a blend of 60% starch to 40% flour as a standard, all-purpose mix so if I don't have a blend already made up, I simply calculate the amount of flour needed for the recipe, divide it by 10 then multiply that number by 60 for my amount of starch in grams, then by 40 for the amount of flour in grams
