Soumada (Greek traditional soft drink) is a very refreshing drink with a bitter almond flavor. Soumada is a non-alcoholic, syrupy, almond-based beverage that is produced on the island of Crete. It is made with a mixture of fresh, locally-grown almonds, sugar, and water, which is simmered in sugar syrup to create this signature Cretan drink. Soumada is a syrup made from natural extract from fresh Cretan almonds that Antonis uses only from the nearby villages of Kritsa and Krousta, famous for their quality almonds.

The ingredients needed to make Soumada:
  1. Get 400 g almonds
  2. Make ready 3-4 bitter almonds or a few drops of bitter almond extract.
  3. Take 1 kg sugar
  4. Make ready 1 l water

Instructions to make Soumada:
  1. Blanch the almonds and the bitter almonds and peel the skin off. Pound them few at a time with a mortar and pestle adding each time 2-3 spoonfuls of sugar and 2-3 of water until you turn them into a paste.
  2. Boil the rest of the sugar in the water stirring constantly until the sugar dissolves. Boil for 5 minutes in order to make a light syrup.
  3. Add the almond paste to the syrup and boil for an additional 5-10 minutes.
  4. Remove from heat and let it cool thoroughly. Pass it through a straner lined with gauze in order for the almonds to strain.
  5. When it cools completely distribute in clean sterilized glass bottles with a cap.
  6. Serve in tall glasses diluted with water or sparkling water measuring 3-4 tbsp of soumada for each glass.

Set aside to cool slightly then remove the skins. Grind the almonds very finely using a food processor. Set a strainer over a bowl and strain the liquid. Soumada drink is a white colour drink that is made from almonds. In antiquity it was known was thiason (from the word athasia which means almonds).
