In a hot skillet on medium heat, add oil, onions, saute until translucent about 8 minutes, add chilli, garlic ginger paste and salt as per taste and saute for a few minutes more, add coriander, sugar, peanuts and tamarind and mix well until the mixture is warmed through, turn heat off and let it cool
  3. Stuff bitter gourd with stuffing
  4. In the same skillet place bitter gourd, pour in 1/4 cup of water, bring to a boil, turn heat on low and leave to cook for 15 minutes, turn heat off and let it rest for 10 minutes before serving, serve as a side with main meal or with a lentil salad, enjoy!
